CHICKEN LETTUCE WRAPS (1)

Anyone ever been to PF Changs? It’s one of my favorite restaurants and one of my favorite things to order there are the Chicken Lettuce Wraps. They are served as an appetizer at the restaurant, but I like to serve them as a main dish when we make them for dinner – either way, they are delicious!

You can make the Lettuce Wraps without the dipping sauce, but it really is amazing, so make sure to give it a try. If I’m short on time, I skip it and everyone still loves this meal!

Ingredients in Chicken Lettuce Wraps

Chicken – I usually use about 2 chicken breasts and cut them into small pieces. You can also use chicken tenders or chicken thighs if preferred.

Water chestnuts – These can be found in a can in the Asian food aisle. Just make sure to drain the liquid out before adding to the recipe. You can chop these up if you prefer them to be in smaller pieces.

Onion – You’ll need 1 small onion diced up. I always save a lot of time with onions by keeping a large stock of diced onions in my freezer to use in recipes like this one. You can find them in the frozen vegetable section of the grocery store. Saves lots of time (and tears)!

Garlic – You’ll need about 2 cloves of minced garlic for the recipe. This is another ingredient that I always “cheat” on by keeping a large jar of minced garlic in my fridge.

Iceberg lettuce – You’ll need about 4-6 large leaves of iceberg lettuce to use for the wraps, depending on how full you stuff the wraps!

Stir Fry sauce:

Soy Sauce – Necessary ingredient in most Asian food! You can use a lower sodium option if you prefer. Lately, I’ve been swapping out soy sauce with coconut aminos – the taste is very similar but I actually like it better!

Brown sugar – Just a little bit of brown sugar, adding in just the right amount of sweetness.

Rice vinegar – Only half a teaspoon, but it adds a splash of flavor.

Asian sauce:

Sugar – Again, a little sweetness never hurts. Just a little bit is needed, but don’t leave it out.

Water – Dilutes the sauce a little bit, makes it go a little further.

Soy Sauce – Again, a very necessary ingredient in most Asian food! You can use a lower sodium option if you prefer. Lately, I’ve been swapping out soy sauce with coconut aminos – the taste is very similar but I actually like it better!

Rice vinegar – You just need a little bit, but the flavor is perfect in the recipe.

Ketchup – Might seem a little strange to have ketchup in an Asian recipe, but it works!

Lemon juice – You can squeeze a lemon or just use the bottled kind (that’s what I usually do!)

Sesame oil – Another important ingredient in most Asian food recipes. It does have a very distinct flavor, so it works better than other oils, but you can swap it with another kind of oil if you don’t have any sesame oil on hand.

Garlic – You’ll need about 2 cloves of minced garlic for the recipe. This is another ingredient that I always “cheat” on by keeping a large jar of minced garlic in my fridge.

Red chili paste – Adds a little bit of a kick, but not too much. The sauce really isn’t too spicy, but you can leave this out or reduce the amount if preferred.

Hot mustard – Another ingredient that kind of kicks up the spice level in the sauce. Can be adjusted according to your tolerance for spiciness!

How to make Chicken Lettuce Wraps

In a large bowl, combine the ingredients for the Asian sauce. Whisk together and set aside.

In a small bowl, mix together the Stir Fry sauce ingredients and set aside.

Heat a large wok and add just enough oil to coat the bottom. Add the chicken and sauté over medium-high heat, until fully cooked through (internal temp of the chicken should be 165°).

Add the onion, water chestnuts and garlic. Saute another 3-4 minutes. Add the stir fry sauce and cook for an additional 30 seconds. Serve inside the iceberg lettuce and use the Asian sauce on the side for dipping.
